Vision
From the outset our goal was to start by developing two gins, both savoury in character, one at 40% incorporating toasted Australian wattle seed and one at 50% incorporating native Australian bush tomato.
Turning the vision into a commercial reality took another 12 months and 45 distillations before we were ready to undertake the process of scaling up to our 150 litre Arnold Holstein copper pot still. During this evolutionary journey we discovered that the creation of a world-class gin involves a mix of artistic vision, science, and perseverance.
Since those early days we have developed a number of other gins, including a 44% ABV version of the Sabre – released in a limited edition of 1.5 litre magnum bottles as The Dirty Harry, and a 58% navy-strength gin that was released as The Broadside in a limited edition run for World Gin Day in 2014. The Broadside navy-strength gin picked up a Double Gold medal at The New York World Wine & Spirits Competition in 2014 and will be officially released as a third product in our range in early 2015.
